Stacey Mehring’s Obituary
Stacey’s life and legacy
Our beloved Stacey passed on July 18, 2024 at Mission Viejo Hospital, surrounded by loved ones. She lived with breast cancer the last 3 years of her life.
Stacey was born in Saigon, Vietnam, the daughter of a businesswoman and a South Vietnam Air Force officer. The eldest of five, Stacey became well acquainted with responsibility from a young age; at the age of 9, just before the city fell, she escaped the war torn country on one of the very last flights out. She, along with her parents and four siblings, first arrived in the USA at Camp Pendleton, CA. They had a short stay before relocating to Oklahoma City, Oklahoma to be near her uncle and his family. There she completed elementary and junior high school, where she excelled in academics, tennis, and orchestra, winning many awards. Before entering high school, her family relocated again to Downey, California, where Stacey attended Santa Fe High School, again achieving academic success.
She met her husband Bryan while attending Rio Hondo College in Whittier CA, whereafter they both moved to La Jolla to attend UCSD. She and her husband recently celebrated 31 years of marriage together.
After college, Stacey started her 30 year long career as a Pharmacy Technician at Fountain Valley Hospital before moving to Providence Laguna Beach.
While pursuing her career, family was always her first priority. She ensured her children’s needs were always met, along with encouraging them to excel in school and activities. For Nicole with dance and piano, and for Bryan Jr with baseball and basketball. Her family has lived in Las Flores for the last 25 years, filling their home with many wonderful memories.
Stacey’s strength, laughter, and spirit will be forever missed, and her legacy of compassion and care will be treasured by all who were fortunate enough to have known her.
